Super Bowl Guacamole? Here's How Our Favorite Foodie Makes It!

What's a Super Bowl without tortilla chips and guac? Food writer Julie Arnan of Kirkland offers this terrific recipe, with variations to suit you tastes.

 

Super Bowl XLVII starts at 3:30 p.m. Sunday (CBS, channel 7), the Baltimore Ravens vs. the San Francisco 49ers, and since our Seattle Seahawks didn't quite make it, for many of us it will be more about the festivities -- and food!

That being the case, we asked our favorite foodie, Kirkland writer Julie Arnan, for her best guacamole recipe -- everything she makes is knock-down, knock-out fabulous. So here's what she sent:

Basic Guacamole Recipe (about 1 c):

  • 1 ripe avocado, 1-2 TB fresh squeezed lime juice (1/2-1 whole lime), 1/4-1/2 tsp Kosher salt (depending on taste). Gently mash the avocado with a fork; add the lime juice and salt. Mix and adjust seasoning to taste. Can easily be doubled.
  • Kick it up with: 1/2 clove garlic, bashed with mortar/pestle (start with a little, you can always add more). *Note: garlic can be roasted first to sweeten the flavor; 1 TB finely diced shallots, soaked in ice water for 10 min. to reduce "heat"1 TB Cotija cheese (white Mexican crumbly cheese)
  • Or any of the following: 2 TB diced mango, sprinkle of pomegranate seeds, 2 TB diced tomatoes, pulp/water removed, your favorite salsa.
