Menu:
Dom Bertiol Prosecco NV: Dom Bertiol Prosecco is produced from 100% Glera grapes (formerly known as Prosecco) hand-harvested from hillside vineyards in Conegliano. It is crisp and refreshing bursting with citrus and tropical fruit aromas and flavors.

Antipasto

Cento Filari Lugana DOC: (2010) 95% Trebbiano; 5% Chardonnay. Grapes for Cesari's Cento Filari Lugana are harvested from vineyards in Lugana near the southern shore of Lake Garda in the towns of Peschiera del Garda and Pozzolengo. Soft pressed and fermented in stainless steel, the wine then rests in contact with its skins for several months before bottling.

Goat cheese Salad

Cesari Mara Valpolicella Superiore Ripasso DOC:
(2009 ) 75% Corvina; 20% Rondinella; 5% Molinara. Named for the winery's matriarch, Mara Cesari, this wine is produced in the extended Valpolicella region near the city of Verona in the Veneto region. Following fermentation in stainless steel, the wine was refermented on the dried grape skins ("the Ripasso technique"). The wine is then racked off for a few months and undergoes malolactic fermentation. Aging takes place for 12 months in Slavonian oak barrels and French tonneaux and 6 months in bottle.

Gorgonzola Meatballs

Cesari Amarone della Valpolicella Classico DOC: (2008 ) 75% Corvina Veronese; 20% Rondinella; 5% Molinara. The grapes to be used in the Amarone production are harvested 1-2 weeks earlier than those for the Valpolicella wine. During the grape harvesting, only perfectly unblemished and dry clusters are selected and placed in shallow cases in single layers.

Stuffed Chicken Breast with Sweet Potato Gnocchi

Cesari, "Il Basco" Amarone della Valpolicella Classico DOC: (2006 vintage) 80% Corvina; 20% Rondinella. The Amarone of the "Il Bosco" vineyard is made into wine only when the grapes are perfectly healthy and in vintag-es of great quality. The vineyard is a small area where the vines are over 18 years old, and where a first selec-tion is made favouring quality over quantity.
